Whoever
wants to visit the best restaurant in the world should head north. More
specifically, to Copenhagen. Since René Redzepi, chef of the Noma
restaurant, has knocked the Spanish chef Ferran Adrià of El Bulli
restaurant off the throne in 2010 (which El Bulli retained for four
consecutive years), nothing in the hospitality world is same as it was.

name of the restaurant is a combination of the Danish words "nordisk"
(cross country) and "mad" (food). And this is exactly how he cooks. In
addition to native Scandinavian ingredients like meat and fish René
Redzepi and his team Noma use local vegetables and wild herbs such as
dandelion and sorrel. On the "Noma" menu you can find ox with smoked
pumpkin, apple and beetroot or langoustines and oysters with seaweed
emulsion.
Redzepi took the challenge more seriously than the others and had so much fun that just then he decided to become a chef. His training led him pretty quickly to the top restaurants. He also toured the Nordic countries, where he tried unconventional dishes like fermented herring and seal liver.
